Carrot Cake

Ironically carrot cake originally contained every other vegetable in the world other than carrots before carrot enthusiasts began to use it in the recipe. It is now the only vegetable contained in the cake since the vegetable war in 1934 brought about this change. Touted to have had a key role in Donald Trump's election campaign for the US presidency, with the President-Elect even modelling his look on the well-loved dessert. Certainly my favourite of the cakes listed.

Ingredients
  • 450ml vegetable oil
  • 400g plain flour
  • 2tsp bicarbonate soda
  • 5 eggs
  • 1/2 tsp salt
  • 2 1/2 tsp ground cinnamon
  • 525g carrots grated
  • 150g walnuts
  • For the icing
  • 200g cream cheese
  • 150g caster sugar
  • 210g butter
Carrot Cake

Preheat the oven to 160oC or gas mark 3.

Get a 26cm/10 springform cake tin all greased up and line with grease proof paper.

Mix all of the ingredients, except the carrots and walnuts, together in a bowl, mix it well, then add in the carrots and walnuts.

Spoon all the mixture into the cake tin and put in the oven for 1 hour 15mins, or to the skewer/fork/knife/something sharp and pointy test insert the sharp and pointy thing into the middle of the cake, if its done, it will come out clean.

Remove the cake from the tine and leave cool on a wire rack.

Cream Cheese Icing

Beat the cream cheese, sugar and butter together till light and fluffy , then spread it over the cake.
